1 (1 lb) can salmon, drained, boned and skinned
1 tbsp chopped capers
2 tbsp bottled horseradish
1 tbsp lemon juice and chopped parsley
1/2 cup mayonnaise
Salt and pepper, to taste
Combine ingredients until well blended. Refrigerate until serving. Serve with crackers or party rye bread.
NOTE: I like to add about 6 oz softened cream cheese to make it a denser spread.
