1 medium cabbage, cored and shredded
1 cup shredded carrot
1 large red onion, pared and diced

Dressing
1 cup cider vinegar
3/4 cup vegetable oil and sugar
2 tbsp dry mustard
1 tbsp celery seed, kosher salt and crushed red pepper flakes
1/2 tbsp black pepper

In a large mixing bowl, combine the cabbage, carrot and onion.

Dressing: In a saucepan over medium heat, combine the dressing ingredients and bring to a simmer. Pour over the cabbage mixture, stir well, cool, cover and refrigerate overnith. Mix well before serving.

Makes about 10 cups (about 20 (4 oz) servings)
