1 (9 inch) pie shell
1 1/2 tbsp olive oil
2 large Spanish onions, peeled, cut into 1/2 inch slices, separated (about 2 cups)
1 tsp sugar
1/2 tsp salt
1/8 tsp freshly ground pepper
3 eggs
1/2 tsp herbs de Province
1/4 cup heavy whipping cream

Heat oven to 400. Using fork, poke holes in bottom of pie shell. Bake 15 minutes. Remove from oven; place on baking sheet. Do not turn oven off.

Heat oil in large skillet over medium - high heat until hot. Add onions, sugar, salt and pepper; cook 7 minutes or until onions are golden brown and caramelized. Remove onions from skillet; cool to room temperature.

In medium bowl, combine eggs, herbs de Province and cream; mix until combined. Stir in cooled onions. Pour in pie shell. Place baking sheet with pie shell in oven. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Serve warm. Serves 6
