1 pound Cheddar cheese, cut into 1-inch chunks
4 oz cream cheese, softened
1/2 cup champagne
1 tsp parsley flakes
1/2 tsp ground nutmeg
1/8 tsp ground red pepper

Place all ingredients in bowl of food processor and cover. Process until smooth and spoon into serving bowl, then cover. Refrigerate for at least 2 hours and let stand at room temperature to soften slightly. Serve with assorted veggies, crackers or bread slices.
