1 pound best quality shucked oysters
1/4 cup cornmeal
1/4 cup all-purpose flour
Kosher salt
Cracked black pepper
1/2 cup vegetable oil


In a bowl combine cornmeal and flour, and season with salt and pepper. Coat oysters in mixture. Heat oil in heavy bottomed skillet or Dutch oven to 350 degrees, and fry until both sides are golden, about 4-5 minutes total. Drain on paper towels. Serve immediately
