FIVE STAR RECIPE & TEST KITCHEN APPROVED. What is there not to like about scalloped potatoes and cheese. This dish is delicious and rich, especially if you use the heavy cream, which prevents the dish from being too watery. You can double the amount of chopped onion, if you love onions. I do and the dish becomes even better in my opinion, but I like to go to extremes. I also add 2 cloves of freshly minced garlic, but again, I like the dish to be savory. (1 garlic clove equals 1/4 teaspoon of garlic powder). These homemade au gratin potatoes are always welcomed at the dinner table, and pair very well with hamburgers or steak for you "Meat & Potatoes" men & women. It also complements ham, pork and even chicken and it simple to make and refrigerates well. Nutritional Information: Serving Size 3/4 cup: 224 calories, 10g fat (7g saturated fat), 35mg cholesterol, 605mg sodium, 26g carbohydrate (4g sugars, 2g fiber), 7g protein.

Simple Scalloped Potatoes Au Gratin; Time: Prep: 20 min. Bake: 1-1/2 hours
Makes 8 servings
Ingredients:
3 tablespoons butter
3 tablespoons all-purpose flour
1-1/2 teaspoons salt
1/8 teaspoon pepper
2 cups 2% milk (or whole milk, half and half, or heavy cream)
1 cup shredded cheddar cheese
5 cups thinly sliced peeled potatoes (about 6 medium)
1/2 cup chopped onion (equal to 1-½ tablespoon of dried minced onion or ½ tbs of onion powder)
Additional pepper, optional

If your worried that your potatoes au gratin will be watery, replace the milk with heavy cream, which has a higher fat content, when you prepare this recipe. Also, russet potatoes have less water and more starch, making them ideal for au gratin recipes.

Directions:

Preheat oven to 350°.

In a large saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat; stir in cheese until melted. Add potatoes and onion.

Transfer to a greased 2-qt. baking dish. (Square - 8 inches wide, 8 inches long, 2 inches deep. Round - 9-inch diameter, 2 inches deep.)

Cover and bake 1 hour.

Uncovered; bake 30-40 minutes or until the potatoes are tender.

If desired, top with additional pepper.
