  • 8 (10-inch size) wooden skewers
  • 1/4 cup soy sauce
  • 2 tablespoons peanut oil
  • 1 piece (1-inch size) fresh ginger, peeled and finely chopped
  • 1 clove garlic, finely chopped
  • 1 tablespoon dark brown sugar
  • salt and pepper, to taste
  • 1 1/2 pound large shrimp, deveined, peeled, tails on if desired
  • olive oil, for cooking grates

Soak the skewers in water for one hour before grilling.

Whisk together the soy sauce, peanut oil, ginger, garlic, brown sugar, salt, and pepper in a large bowl. Add the shrimp and stir to coat the shrimp in the marinade. Cover the bowl and refrigerate for 30 minutes or up to 4 hours. Do not marinate overnight.

Preheat the grill and oil the cooking grates.

Remove the shrimp from the marinade. Thread 4-5 shrimp on each skewer. Place the skewers on the grill and cook for 1 minute per side or until the shrimp are pink.

Serve immediately.
