Garlic-Cheese Broccoli

- 1 head broccoli, cut into 1-inch florets
- 1 teaspoon olive oil
- 2 teaspoons minced garlic
- 3/4 cup shredded Monterey jack cheese (or Muenster)
- 1 tablespoon Romano or Parmesan cheese
Spray 2-quart casserole dish with vegetable oil spray. Preheat oven to 350 degrees F. Place broccoli in a steamer over boiling water and let steam for 5 about minutes. Meanwhile, pour the oil into a medium-sized saucepan and saute the garlic over medium heat for 1-2 minutes, until lightly golden, being careful not to brown it too much. Remove from heat. When the broccoli is finished steaming (it'll be bright green and just tender), toss with the garlic and olive oil until well coated. Place the broccoli evenly in the prepared casserole dish and top with the shredded Monterey Jack cheese and sprinkle with the Romano or Parmesan. Place in the oven and bake at 350 degrees F for 15-17 minutes or until cheese is melted and golden brown. Serve hot.
