  • 1 1/2 pound ground beef
  • 1 small onion, diced
  • salt and pepper, to taste
  • 2 cans (16 ounce size) tomatoes, drained
  • 2 cans (16 ounce size) French green beans, drained
  • 8 ounces shredded mild Cheddar cheese
  • 4 cups mashed potatoes, seasoned with salt and pepper

Preheat the oven to 350 degrees F.

Heat a large skillet over medium heat. Add the ground beef and onion and cook, stirring, until the meat is no longer pink. Drain off the fat. Season to taste with salt and pepper.

Place half of the ground beef mixture in the bottom of a 13x9 baking dish. Evenly spread half of the drained tomatoes over the top. Place half of the drained green beans over the tomatoes. Repeat the layers.

Sprinkle the cheese on top of the last layer then cover completely with the mashed potatoes.

Place the dish in the oven and bake at 350 degrees F for 35-40 minutes.

Remove from the oven and serve hot.
