Serves 6

1 1/2 lb yams, boiled, peeled and sliced ¾ inch thick
2 cup cooked ham, chopped
1 1/2 cup Golden delicious apples, peeled, cored and sliced
1/4 tsp salt
1/4 tsp paprika
1/2 cup brown sugar, packed
2 Tbsp bourbon or apple juice
2 Tbsp butter

Arrange half the yams in a greased 2 quart round casserole dish; set aside. Layer them evenly over yams, then layer apples evenly over ham. Arrange remaining yams over the apples; sprinkle with salt and paprika. Set aside. Combine brown sugar and bourbon or apple juice; sprinkle evenly over ingredients in baking dish. Dot with butter. Bake, covered, for 20 minutes. Baste with pan juices; bake, uncovered, for an additional 25 minutes. Baste and serve.
