  • 4 slices bacon, chopped
  • 4 medium potatoes, thinly sliced
  • 1 medium onion, chopped
  • garlic salt
  • black pepper
  • cheddar cheese
  • chopped green onions

Heat a heavy skillet over medium-high heat. Add the chopped bacon. Cook, stirring frequently, until the bacon is just starting to get crisp.

Add the potatoes and onion. Stir well to coat in the bacon grease.

Cover the skillet and reduce the heat to low. Cook for 30 minutes, stirring occasionally, until the potatoes are tender.

Season to taste with garlic salt and pepper. If desired, add cheese during the last few minutes of the cooking time. Garnish with green onions before serving.

Serve the fries hot.
