Basic Fried Pickles

- vegetable oil, for frying
- 1 cup self-rising cornmeal mix
- 1/4 cup flour
- 1/2 teaspoon ground black pepper
- 1 egg, lightly beaten
- 1/2 cup milk
- 2 cups dill pickle chips, well drained, patted dry with paper toweling
Heat the oil to 360 degrees F in a deep fryer or deep, heavy pan. Mix together the self-rising cornmeal, flour, and black pepper in a shallow dish. In another dish, whisk together the egg and milk. Dip the pickle chips into the egg mixture. Let any excess drip off then dredge in the cornmeal mixture. Add the coated pickles, in batches, to the hot oil and cook for 3-4 minutes or until golden brown. Remove with a slotted spoon and let drain on paper toweling. Serve the fried pickles with your favorite dipping sauce (ranch is good).
