Fried Potatoes AKA Scalded Taters

2 very large russet potatoes
1/2 cup Crisco or Lard
1/2 cup water
+ more water as needed
Salt to taste

In a large heavy skillet, start heating the Crisco/Lard and 1/2 cup water on medium heat. They must be put in at the same time and at room temperature.

Meanwhile peel the potatoes, slice them longways in half, and then slice the halves into quarter inch slices. Salt lightly before cooking.

Put as much of the potatoes in the skillet and cook, stirring occasionally until they are just beginning to brown. Add water by tablespoons as needed to prevent sticking.

They do better if covered with a lid between stirring.

Remove to a serving bowl and repeat the process as needed until all the potatoes are cooked, keeping warm until serving.

These are a little greasy, but boy, are they good
