Ham And Taters Breakfast Casserole

Ready in: 2-5 hrs
- 1 pound frozen tater tots
- 1/2 pound diced ham
- 1/2 cup chopped onion
- 1/2 cup diced green bell pepper
- 3/4 cup shredded Cheddar cheese
- 6 eggs, beaten
- 1/2 cup milk
- salt and pepper, to taste
Lightly grease the inside of a crock pot. Layer 1/3 of each of the following ingredients in order: tater tots, ham, chopped onion, green bell pepper, Cheddar cheese. Repeat layers two more times, ending with the cheese. Combine the eggs and milk in a bowl and whisk well until combined. Add salt and pepper to taste. Evenly pour the egg mixture over the layered ingredients in the crock pot. Cover the crock pot and cook on low heat for 3-5 hours (older crock pots will need to cook longer). Serve hot.
