1 (16oz) smoked sausage
2 cups small broccoli florets
2 Cups shredded sharp cheddar cheese, Divided
1 cup long grain rice
1 cup chicken broth
1 tsp garlic powder
1/4 tsp black pepper
14.5 oz can diced tomatoes with basil, garlic, & oregano


1. Preheat oven to 375°F
2. Cut smoked sausage into thin slices and set aside.
3. Heat rice, broth, and seasoning in a 2 ½ quart saucepan; bring to a boil. Reduce heat to low, then cover and simmer for 12 minutes.
4. Add broccoli to saucepan and continue cooking for 5 minutes.
5. Mix smoked sausage, tomatoes (with liquid), and ½ cup of cheese in with the rice and broccoli. Put into a 2-quart baking dish, then cover and bake for 20 minutes.
6. Sprinkle remaining cheese onto smoked sausage bake. Continue to bake uncovered for 3 minutes until the cheese melts.
