1 Qt water
1/4 cup salt
1/4 cup brown sugar


1. Mix all ingredients together.
2. set meat in solution
3. You can also add spices, chopped garlic or onion, or even a dash of molasses or brandy.
4. Adjust the recipe to make sure your entire loin is submersed. Put the water and other ingredients in a pot and bring to a boil. Simmer for about 5 minutes, then remove from the heat to cool.
5. Add a couple cups of ice to bring the temperature of the brine down to about 45° F.
Pour the brine in a plastic bag and add your meat, shake if you have spices added, then place the bag into a bowl in case of leakage. Leave in the refrigerator For four hours to overnight.

Can be used for cucumbers, onions, garlic, mushrooms, jalapeno/sweet bell peppers, cauliflower, broccoli or just about anything. Heat a 50-50 mixture of white vinegar and water to a boil; simmer.




Pork Marinade
