1 pkg. noodles (12 to 16 oz.)
4 Chicken thighs
2 Tbs. Chicken bouillon
2 Large carrots (diced)
2 Stalks celery (diced)
3/4 Medium onion (diced)
Pepper (to taste)
Cook chicken in boiling pot for one hour. Set aside to cool.
Dice carrots, celery and onion ahead of time, keep in bowl of water (just enough to cover ingredients).
Using broth from chicken, bring to a boil, add carrots, celery and onion to broth along with the water and several shakes of pepper. Add chicken when cool enough to break apart into pieces.
Simmer for 30 to 45 minutes (check consistency).
Allow plenty of broth if you want soup. Broth will soak up into noodles when left standing or put into refrigerator.
Serves 4 to 6.
Modify any ingredients to flavor to your liking!
