Beef & Pork Meatloaf

- 2 cups soft bread crumbs
- 1 pound lean ground beef
- 1 pound lean ground pork
- 1 egg, slightly beaten
- 3 tablespoons chopped parsley
- 1 medium onion, chopped
- 3 cloves garlic, chopped or pressed
- 1 stalk celery, finely chopped
- 1/2 teaspoon thyme
- 1/2 teaspoon black pepper
- 1 1/2 teaspoon salt
- 3 peeled hard-boiled eggs (optional)
Preheat the oven to 350 degrees F. In a large bowl, mix together the bread crumbs, beef, pork, egg, parsley, onion, garlic, celery, thyme, pepper, and salt. If adding the hard-boiled egg, pat the meatloaf mixture out into an 8x8 square on waxed paper. Place the whole hard-boiled eggs on one half and fold the remaining half over, sealing the sides. Place in a loaf pan. If not adding the eggs, simply form the meatloaf into a loaf and place in the pan. Place the pan in the oven and bake at 350 degrees F for 1 1/2 hours or until cooked through. Can serve the finished meatloaf with gravy or coat the top of the meatloaf with ketchup or tomato sauce before baking.
