Yield: 8 servings
1 pound spicy Italian bulk sausage (see note)
1 large yellow onion, chopped
2 cloves garlic, minced
2 green bell peppers, seeded and chopped
1 teaspoon Italian seasoning
2 zucchini, chopped
6 cups chicken broth
2 (15-ounce) cans chopped tomatoes
1 pound frozen cheese tortellini
Grated Parmesan cheese
Crusty bread, for serving
1. In a large pot over medium-high heat, brown sausage with onion and garlic, breaking up meat to form small pieces. Drain if necessary.
2. Stir in bell peppers, Italian seasoning and zucchini; cook about 5 minutes, until zucchini begins to soften.
3. Add broth and tomatoes (with their juice); cook until vegetables are tender, 10 to 15 minutes.
4. Meanwhile, cook tortellini according to package directions; drain and keep warm. Ladle about 1/2 cup tortellini into each soup bowl; add about 1 1/2 cups of soup. Garnish with Parmesan. Serve with crusty bread.
Note: Spicy sausage provides most of the seasoning in this soup. If using a milder sausage, add 1/4 teaspoon red pepper flakes with the Italian seasoning and increase the garlic to 3 cloves.
