double crust for 10" pie
2 (14 1/2 ounce) cans tart cherries in water
1 1/2 cup sugar
1/3 cup tablespoons cornstarch
1 tablespoon butter
1/8 teaspoon almond extract
1/2 teaspoon vanilla
1 teaspoon lemon juice
1/8 teaspoon salt
a few drops of red food coloring,
Directions:
Drain cherries, reserving 1 cup liquid. Mix sugar, salt and conrstarch in small sauce pan. Gradually stir in reserved liquid until smooth. Heat over medium heat, stirring constantly until mixture bubbles. Cook one more minute until thick and clear. Remove from heat. Let cool a little. Stir in butter, cherries, almond and vanilla extract and food coloring. Pour into prepared pie crust. Cover with vented or lattice top curst.
Brush with egg wash and sprinkle with Turbinado sugar (I buy Sugar in the Raw brand)
Bake at 425 for 15 minutes. Reduce heat to 375 and bake 35 more minutes until golden brown. Cover edges with foil if browning to quickly,
