I could eat these straight out of the jar!

2-3 pounds fresh peaches
2-3 cups sugar
Pinch salt

Peel and core the peaches and cut into thin slices. Place in a stock pot. Pour in the sugar... Better to get a little much and too little. Do not add water! The natural juices of the fruit will soon begin to cook out.

Cook until completely cone – the color will change and the peaches will be very mushy. Taste for sweetness, bearing in mind that Maw Maw’s preserves were much sweeter than most.

It should be slightly thick and gooey peach-flavored mush!

Pour into sanitized canning jars and process in a boiling bath for ten minutes.
