For my Christmas present in 1979 or 80, my brothers went together and bought me an electric pizza maker, which was wonderful but didn't hold up and was gone in about a year. Still two great things came of that short-lived gift... 1. I learned to make homemade pizza, and 2. the best pizza crust recipe known to man. I can't recall the brand of the appliance, but I am forever grateful to my brothers for buying for sister, whom they knew would probably invite them over for dinner once in awhile.

For crust:

1 c. warm water (not hot)
2 T yeast
1/2 c. olive oil
1 – 2 T sugar
1/2 tsp salt

Mix together, dissolving yeast. Then add:

3 1/2 c. flour (1 cup at a time)

Knead well. Let rise covered, in a warm place for 20 minutes. (This is a good time to prepare any toppings you want to use besides cheese.)

Spread onto greased pizza pan, and then add toppings in order:

1 small can tomato paste
Sprinkle with Italian seasoning (basil & oregano)
Grated mozzarella cheese, or other Italian-type cheeses
(We like to mix 3 or 4 different cheeses)

Then add whichever toppings you like. I suggest: cooked ground beef; cooked Italian sausage; sliced mushrooms; diced onion; sliced black & green olives; diced bell pepper; pepperoni; Canadian bacon; crumbled bacon; and/or even a little diced cooked chicken breast or spinach if you’re brave.

Bake pizza at 450º for 25 – 30 minutes.

Makes 1 large pizza (about 24” across)
