It's an old south favorite that's regained a bit of popularity due to advertising and a famous oat and grits company. Serve as you would serve potatoes or as a breakfast cereal.

5 cups water
1 teaspoon salt
1 tablespoon minced garlic
1 tablespoon minced onion
1 1/4 cups uncooked grits
1/2 cup sharp cheddar cheese, grated
1/2 cup grated Parisian cheese
1/2 cup cream
1 tablespoon butter
1 tablespoon chives
Dash black pepper or Mrs. Dash (Due to allergies I no longer use pepper)

8 servings

Bring water, salt, onion, & garlic to a boil in a medium saucepan over medium heat, cooking until seasonings are tender. Gradually stir in grits; being careful to prevent lumping, then bring to a boil. Reduce heat to medium-low, and simmer, stirring frequently, until thick. Stir in cheese, butter, cream, chives, and pepper, blending well and making sure cheese is melted before serving. Serve hot.
