When Daddy was responsible for Saturday lunch, almost always this was his favorite thing to cook. It's fast and easy, and relatively inexpensive, which made it all the better for a very not-rich farmer. Note that you may use a burrito with meat if you like, and of course you can add chili to the beans.

Servings vary. Make one or two for each as desired.

Defrosted frozen burritos, any flavor
Large can Ranch-Style beans
American cheese slices
Sour cream

You’ll need a deep fryer or a pan with oil for deep frying.

Preheat the oil. Put the beans in a large saucepan and heat thoroughly. Keep warm.

Deep fry the burritos, turning as necessary to brown evenly. They should be light brown and hot in the center. Drain on towels.

To plate: Place one or two burritos on each plate, slightly off-set in the center. Put one or two slices of cheese on each burrito, as you like. Spoon hot Ranch-Style beans over the cheese. Top with a dollop of sour cream, and any other garnishes you like.

Serve with Spanish rice and guacamole on a bed of shredded lettuce on the side.

A nice chilled caramel flan or Mexican chocolate pudding makes a perfect dessert.
