For the salad:

4 cups cooked chicken breast, cubed very small
1/4 cup minced onion
1/2 cup very thinly sliced celery
1/2 - 3/4 cup chopped English cucumber, with peel intact
1/2 cup slivered almonds

Mix well. Coat with dressing. Serve chilled on lettuce leaves or as a sandwich filler.

For the dressing:

1 cup mayonnaise (not salad dressing)
1/2 teaspoon cider vinegar
1/4 - 1/2 teaspoon liquid stevia
1 teaspoon curry powder

Mix to blend. Stir into salad, blending very well.
