Makes 36 servings.

4 c. cubed, cooked chicken breast
2 unpeeled red apples, chopped
1 1/2 c. dried cranberries
1 c. thinly sliced celery
1/2 c. chopped pecans
1/4 c. thinly sliced green onions
1 1/2 c. mayonnaise
4 tsp. lime juice
1 tsp. curry powder
salt and pepper
36 2-inch square slices pumpernickel bread
butter
spring greens lettuce leaves

In a bowl, combine chicken, apple, cranberries, celery, pecans and green onions.
Combine mayonnaise, lime juice and curry powder; add to chicken mixture and stir to coat.
Season with salt and pepper to taste; cover and refrigerate until ready to serve.
Spread each slice of pumpernickel lightly with butter; top with lettuce leaves and chicken salad.
