Elegant Applesauce In Baked Apples
8 Granny Smith apples
1 tablespoon brown sugar
1/2 teaspoon ground cinnamon
4 teaspoons butter
1/4 cup water
1 tablespoon honey
12 sprigs mint
Preheat oven to 375 degrees. Core 4 of the apples and peel some of the skin from around the top.
Mix brown sugar and cinnamon together and sprinkle over apples. Add 1 teaspoon butter on top of each apple and place in a baking dish. Add 1/2 inch of water to pan, cover and bake for 40 minutes or until just cooked.
Remove from oven and let cool before handling. Scoop most of the flesh from the inside of each apple and set aside, leaving skin intact.
Peel, core and chop 4 remaining apples. Cook the apple, water and honey for 7 to 9 minutes or until tender. Puree apples for 1 minute or until smooth. Add reserved apple and mix well.
Place an apple shell in the center of each plate and spoon in applesauce. Arrange mint sprigs around base of apples.
Serves 4.
