1/2 cup apple juice
1/4 tsp ground cinnamon
4 small red baking apples
1/4 cup chopped walnuts or pecans
1/4 cup packed brown sugar

In a small bowl, combine juice and 1/8 tsp cinnamon. Divide mixture among 4 individual ramekins. Core and peel apples and place in ramekins and place in a shallow baking pan. Combine remaining cinnamon, nuts and brown sugar and sprinkle over apples. Bake, covered, at 350 for 30-40 minutes or until apples are tender. Serves 4.
