Wash and core 4 baking apples; pare skin from top half. Brush with lemon juice. Fill centers with chopped dried fruit. Crush ginger snaps, graham crackers or sugar-coated cereal to make 1/3 cup crumbs. Melt 1/4 cup butter; brush apples with melted butter and press crumbs onto pared surface. Put 1 tsp apple jelly and a short cinnamon stick into each apple. Put apples into an 8 inch baking sheet.

Mix 3/4 cup apple juice, 1/4 cup packed brown sugar and remaining melted butter; pour into baking dish around apples. Bake at 375, about 45 minutes. Baste fruit with cooking juice during the last 25 minutes. Serve with vanilla cream sauce. Serves 4

Vanilla Cream Sauce: Combine 3 tbsp sugar and 1 tbsp cornstarch in a saucepan; add 1 cup milk. Cook and stir over medium heat until mixture thickens. Beat a small amount into 1 beaten egg yolk; stir into hot mixture. Cook and stir 1 minute. Add 1 tsp vanilla and chill. Whip 1/2 cup heavy cream and fold into chilled mixture.
