Chocolate Goat Milk Fudge

2 ounces unsweetened chocolate
3/4 cup goat milk
2 cups sugar
1 teaspoon light corn syrup
2 tablespoons butter
1 teaspoon vanilla

Melt chocolate in milk. Add sugar and corn syrup and cook slowly, stirring constantly until sugar dissolves. Cook gently to softball stage, 234 degrees, stirring frequently.

Remove from heat and add butter and cool at room temperature until lukewarm, 110 degrees, without stirring. Add vanilla and beat vigorously until fudge becomes very thick and loses its gloss. Quickly spread in butter pan. When firm, cut into squares.
Serves 24.
