2 small yellow onions, chopped
juice of 2 large lemons
1/2 large pineapple, chopped
1 tomato, chopped
1/2 red bell pepper, chopped
1 jalapeno pepper, chopped (optional)
1/2 bunch of cilantro, chopped
Chop everything into small cubes/squares. Mince the jalapeno and cliantro.
Hint: chop the onions first and add the lemon juice to the onions, (strain the lemon juice to avoid seed and pulp). This will take away the strong onion odor and taste that can overpower the salsa. Let that sit together first while you chop the rest of the ingredients.
Combine all the ingredients and chill before serving. Happy eating!
