3 tablespoons butter
3-4 large potatoes, cut to 1/2 inch dice
1 large onion, diced
1 chicken boullion cube
3-4 cups water (enough to cover potatoes)
1 can evaporated milk
1 1/2 teaspoons salt
1/2 teaspoon black pepper
6 slices bacon,diced and fried crispy
1/2 cup sour cream
1/2 cup green onions, sliced
1 cup cheddar cheese, shredded

Melt butter in a large soup pot over medium heat, add onions and saute until translucent (do not brown), add potatoes, water, salt and black pepper and bring to a boil, cook until potatoes are tender when pierced with a fork.

Add evaporated milk and bring back to a gentle boil. Remove from heat, add bacon. Place into serving bowl and garnish with cheese, sour cream and diced green onions, Serve hot. (You could serve this in a bread bowl if you wanted, and garnish each bowl seperately.) Serves 8-10.
