Chicken Fajitas

- 2 pounds boneless, skinless chicken, cut into strips
- 1 onion, thinly sliced
- 1 red or green bell pepper, seeded and sliced
- 2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/2 cup chicken broth
- 1 tablespoon fresh lime juice
- 8 warm flour tortillas
- shredded Cheddar cheese
- sour cream
- guacamole
- shredded lettuce
- diced tomato
Combine the chicken, onion, and bell pepper in the crock pot. In a bowl, mix together the chili powder, cumin, salt, broth, and lime juice. Pour over the chicken mixture. Cover the crock pot and cook on low heat for 6 hours or until the chicken is cooked through and the vegetables are tender. To serve, place some of the chicken and vegetable mixture in the center of each tortilla. Top with shredded cheese, sour cream guacamole, lettuce, and tomato. Serve immediately.
