Confetti Salsa:

1 can black eyed peas
1 can pinto beans
1 can black beans
All drained and rinsed

1 can corn, drained
1 small jar pimento, drained and diced
1 medium onion, diced
1 cup chopped celery
1 cup chopped green pepper
1 finely chopped jalapeno pepper

Sauce:
1 tsp salt
1 tsp pepper
1TBS water
3/4 cup cider vinegar
1/2 cup oil
1 cup sugar

Bring to a boil and add to vegetable mixture.
Refrigerate all overnight.
Drain before serving
Serve with Frito scoops or Tostitos
