Serves 1
2 Tbsp mayonnaise
1 tsp soy sauce
ground ginger, sprinkle
1/4 cup grated peeled carrot
1/4 cup fresh bean sprouts
1 large green leaf lettuce leaf
Put the first 3 ingredients into a bowl. Stir until well blended.
Add the carrot and bean sprouts. Stir until coated.
Place the lettuce leaf on the plate. Spoon the vegetable mixture in a horizontal line across the middle of the lettuce leaf. Fold the sides over the filling. Roll up from the bottom to enclose the filling.
