For Rice

1 cup jasmine rice
1 3/4 cup water
1/4 teas salt

Wash rice until water runs clear
drain well in sieve

bring 1 3/4 c water and 1/4 teas salt to a boil. Add rice and cooked covered over low heat until water is absored and rice is tender..about 20 minutes. Let stand cover and undisturbed for 10 minutes. Transfer to bowl and fluff with fork.

For dressing:
1/2 cup seasoned rice wine vinegar
1/2 cup vegetable oil
6 tablespoons mayonnaise
1/4 cup soy sauce
1/4 cup finely chopped and peeled fresh ginger. about a 2 inch piece
2 garlic cloves chopped
1/2 teaspoon sesame seed oil

Blend in blender until smooth
set aside to serve with wrap
*******************************

For wraps
2 cups shredded cooked chicken breast
(2 breasts)
1/3 cup lime vinaigrette* (recipe below)

Toss chicken with vinaigrette


Put chicken and remaining ingredients into seperate bowls and let everyone make their own wrap. Put ginger dressing on the side.

3/4 pound boston or bibb lettuce, etc..

1/2 seedless cucumber cut into 1/8 inch matchsticks

3 green onions, cut into 18 inch matchsticks

1 (1 lb) ripe mango peeled, pitted and cut into 1/8 inch matchsticks

1/2 cup fresh cilantro

lime vinaigrette*

1/2 cup fresh lime juice
1 Tablespoon honey
1/2 teaspoon dried red pepper flakes
2 teaspoons salt
1 cup good extra virgin olive oil

Will have a little more then needed but save for a salad.

serves about 4
