Makes 3 dozen
1 cup milk
1 pkg dry yeast
1/4 cup lukewarm water
1 cup margarine
4 cup flour, sifted
1/4 cup sugar
1 tsp salt
1 tsp grated lemon rind
2 eggs, beaten
melted butter
cinnamon sugar
Scald milk; cool to lukewarm. Dissolve yeast in 1/4 cup lukewarm water. Cut margarine into sifted flour, sugar and salt in bowl until crumbly. Add lemon rind. Add yeast and eggs to cooled milk. Stir lightly into flour mixture. Let stand, covered, if refrigerator for 2 hours to overnight.
Divide dough into 2 parts. Roll on floured surface. Brush with melted butter; sprinkle with cinnamon sugar. Roll as for jelly roll.
Slice each roll into 18 slices. Arrange cut side down in 3 greased cake pans. Bake at 400 F for 15 minutes or until light brown.
