2 LB Beef Roast/Steak 1” cubes
1 LB Ground Beef
1 Medium Onion diced
1 Bell Pepper diced
1 T Chopped Garlic
1 28 oz. Can Diced Tomatoes
1 14 oz. Can Tomato Sauce
1 8 oz. Can Tomato Paste
2 Cans Beer
3 California Chiles
2 Guajillo Chiles
1 New Mexico Chile
2 t Chili Powder
2 t Ancho Chili Powder
2 t Hot Mexican Chili Powder
2 Beef Bullion Cubes
1 Chicken Bullion Cube
½ t Cayenne
½ C Sugar
4 Bay Leaves
⅛ t Ground Clove
1 T Garlic Powder
1 T Onion Powder
1 T Italian Seasoning
1 t Rosemary
1 t Thyme
3 T Cocoa
1 T Cinnamon
3 T Cumin
1 Can Chili Beans

Toppings: Shredded Cheese, Crackers, Sour Cream, Green Onions

In large pot or Dutch oven, brown ground beef and drain and set aside. Brown cubed roast/steak and set aside.

Sauté onion, pepper, and garlic for 2 min. Add tomatoes and tomato paste and sauté additional 1-2 minutes. Add tomato juice, beer, and dry ingredients with ¼ C of the sugar. Bring to a boil. Reduce heat to simmer.

Boil chiles until soft. Drain and puree in food processor. Add chiles to chili and simmer for 2 ½ hours, stirring every ½ hour.

Add chili beans and additional sugar to taste and remove bay leaves. Simmer additional ½ hour.

Serve with Shredded Cheese, Crackers, Sour Cream, and/or Green Onions
