  • cooking oil
  • 1 pound frozen French fries
  • 1 cup shredded Colby Jack cheese or Mexican cheese blend
  • 6 slices bacon, cooked and crumbled

Preheat the oven to 300 degrees F. Heat oil in a deep fryer, or heavy pan, to 350 degrees F.

Add the fries, in batches as needed, and cook until they are golden brown and float in the oil. Remove the fries with a slotted spoon and let drain on paper toweling. Repeat with remaining fries.

Place the fries on a heat-proof platter. Season as desired with salt. Sprinkle the cheese and bacon on the fries. Place the fries in the oven and heat until the cheese melts. If desired, you can do this step in the microwave.

Serve hot.
