7Up Pound Cake II

- 1 1/2 cup butter
- 3 cups all-purpose flour
- 3 cups sugar
- 5 eggs
- 1 cup 7-Up, at room temperature
- 2 teaspoons lemon extract
Preheat oven to 325 degrees F. Grease and flour bundt pan. Cream butter and sugar until creamy. Add eggs one at a time until blended. Alternately add flour with the 7Up, ending with flour. Add the lemon extract and mix thoroughly. Pour batter into prepared pan. Bake for approximately 1 hour and 15 minutes, or until toothpick inserted in center comes out clean. Remove from oven and cool in the pan for 20 minutes. Remove from pan and cool thoroughly. Cook's Notes: This is a wonderfully moist pound cake that is very popular for family or church events. If 7-Up is not available, any lemon-lime soft drink will be fine. Have ingredients at room temperature. Frosting is optional.
