Easy Slow Cooker Pot Roast

4 pounds chuck roast
salt and pepper to taste
spice rub of choice
olive oil
1 packet dry onion soup mix
1 cup broth
1-2 cups baby carrots, whole
1 onion chopped or quartered
2-3 cups small potatoes cut in half or quarters
1-2 stalks celery, chopped

Rub roast with seasonings. Brown in olive oil on all sides in skillet over high heat.

Place in slow cooker, add the soup mix, broth, onion and celery.

Cover and cook on low for 8-10 hours. Add carrots and potatoes halfway through cooking time to avoid them becoming mushy.
