Oh, you KNOW I Do! LOL
It takes a bit of work...but they are WELL worth and the batch is big enough
to freeze some!

Dough
2 pkg active dry yeast
1C warm water
2/3 cup sugar
1 tsp sugar
1 C warm milk
2/3 C butter
2 tsp salt
2 eggs slightly beaten
7-9 C All-Purpose Flour

Filling
1 C melted butter (divided into 1/2 cups)
1 1/2 C sugar
1/4 C Sugar
3 TBSP Ground Cinnamon
(you can add raisins, nuts, etc at this point...but I do not add anything
else)

Mix together warm water, yeast and 1 tsp sugar. In a large bowl, mix milk
and remaining 2/3 cup sugar, melted butter, salt and eggs. Stir well and add
yeast mixture. Add half of the flour and beat until smooth. Stir in enough
remaining flour to make the dough sticky and slightly firm. (not too firm)
On a well floured board, knead 5-10 minutes. Place in a well-buttered glass
bowl and let set in a warm place until it is doubled in size. (1 to 1 1/2
hours)
When it doubles...punch it down adn LET IT REST for 5 minutes. Roll out onto
a floured surface.
Prepare filling by mixing 1/2 cup melted butter, cinnamon, and 1 1/2 cup
sugar and then spread over dough. (If you choose to add nuts or raisins
sprinkle them on now) Start at one end and roll it up....(jellyroll) Cut
into slices....(I think they do better if cut thick...but maybe I just like
think cinnamon rolls : - P )
Coat the bottom of a ban with butter and sprinkle with the remaining 1/4 C
sugar ....let them rise again in a warm place...(this time it should only
take about 45 minutes)
Preheat oven to 350 and bake 25 minutes or until golden brown.
While they are baking, you can prepare glaze and icing.

Glaze
2/3 C melted butter
4 C powdered sugar
2T Vanilla
4-8 Tbsp Hot water
(recipe can be cut)

Mix melted butter, powered sugar, and vanilla...add 1 Tbsp hot water until
it reaches desired consistency. spread over slightly cooled rolls.
NOW FOR THE GREAT PART....

Icing
1 lb margarine
1 lb Cream Cheese
2 lbs Powdered Sugar
2 tsp lemon juice
2 tsp vanilla extract
(recipe can be cut in half)

Allow margarine and cream cheese to reach room temp. Beat margarine, cream
cheese, lemon juice, and vanilla together until smooth and slowly add
powdered sugar. Once all of the sugar is mixed in, beat for an additional
12-15 minutes. (this is important... so a stand mixer or help from a husband
or child may be handy!)

NOTE: This is a copycat Cinnabon Recipe and is in NO WAY healthy!!! They DO
take a while to prepare....but these are the BEST Cinnamon Rolls that you
will EVER eat and at a price that is A LOT less than Cinnabon!!! My family
LOVES them...and it makes a HUGE batch so my neighbors LOVE when I make them
too!!! LOL
