  • 64 ounces pineapple chunks in juice, drained
  • 2 cups sugar
  • 1 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 1 1/2 cup shredded low fat Cheddar cheese
  • 1/2 cup margarine, softened
  • 4 ounces buttery round crackers

Preheat oven to 375 degrees F.

Mix sugar, flour and cinnamon. Add the pineapple and 3/4 of the cheese, coating it well. Pour into a buttered 9\" x 13\" pan. Sprinkle the remaining cheese on top of the casserole.

Mix the margarine with the crackers; cover the top of the casserole. Bake for 45 minutes.
