Chickpea and Chorizo Casserole

Ingredients (per serving desired):
- 1 Spanish chorizo link (can substitute chicken or soy)
- 1 cup sparking apple cider
- 1/2 small yellow onion, chopped
- 1 cup chickpeas
- 2 slices crusty bread, cut into small chunks
- 1 egg
- 1/3 cup skim milk
- 1/4 cup chicken broth
- 1/4 cup gruyere cheese
- Olive oil
- Pinch of salt

- For an easier variation, can use apple flavored sausage and skip the step with the cider, simply cook the sausage and then chop

Directions:
- Preheat oven to 400 degrees and grease a casserole dish (can use one large or multiple individual ones)
- Heat a large skillet on medium heat and add chorizos (whole links in casings) and cider; simmer for 20-30 minutes or until chorizo plumps and absorbs the liquid
- Remove the sausages and drain any extra liquid
- Add a small amount of olive oil to the same pan and add the onions
- Once the onions are almost translucent, add the chickpeas and cook for five more minutes
- Chop the chorizo and add to the pan; add the bread and stir everything together
- Pour mixture into the casserole dish
- Whisk eggs, milk, and chicken broth together; add the pinch of salt; and pour over the casserole dish
- Top with cheese and bake for 40 minutes, or until middle is set and cheese is golden brown and bubbly
