Baked Cornish Game Hens

- 3/4 cup butter
- 1 clove garlic, minced
- 2 tablespoons finely chopped fresh basil
- 1 teaspoon dried oregano
- seasoned salt and pepper, as desired
- 2 tablespoons finely chopped fresh parsley
- 1 medium onion, chopped
- 1 stalk celery, chopped
- 1/2 green bell pepper, chopped
- 8 ounces fresh mushrooms, chopped
- 6 whole cornish game hens
Preheat the oven to 325 degrees F. In a saucepan over medium heat, combine the butter, garlic, basil, oregano, and parsley. Cook, stirring constantly, until the butter is melted. Remove the pan from the heat. Season the game hens inside and out with salt and pepper. Baste the outside of the hens with the butter mixture. Add the onion, celery, bell pepper, and mushrooms to the pan and place over medium heat. Cook, stirring frequently, until the vegetables begin to soften. Remove the pan from the heat and let cool slightly then stuff each hen with an equal amount of the vegetable mixture. You can tie the legs together with kitchen twine if desired. Place the hens breast-side up in a large baking dish or roasting pan. Cover lightly with foil and place in the oven. Bake at 325 degrees F for 1 1/2 hours. Increase the oven temperature to 500 degrees F and remove the foil. Bake until the hens are golden brown (keep your eye on them so they do not burn). Remove from the oven and let stand for 5-10 minutes, lightly covered with foil, before serving.
