  • 4 Cornish game hens
  • 8 ounces stuffing mix, plus ingredients needed to prepare
  • 1 large orange, peeled and cut into segments
  • 1 cup chicken stock
  • 1/4 cup fresh orange juice
  • 2 tablespoons honey
  • 1 1/2 teaspoon vegetable oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon grated orange peel

Season the hens, inside and out, with salt and pepper.

Prepare the stuffing mix as directed on package. Spoon the prepared stuffing into the cavity of the hens. Tie the legs together using kitchen twine. Place the hens in the crock pot, neck-side down (so the legs are pointing up).

Place the orange segments in the crock pot around the hens.

Combine the chicken stock, orange juice, honey, oil, lemon juice, and orange peel. Slowly drizzle the mixture over the hens to coat them.

Cover the crock pot and cook on low heat for 5-7 hours or until the hens are cooked. Baste the hens with some of the juices once or twice during the cooking time and again before serving.

Remove the hens from the crock pot carefully (they will be very tender) and serve.
