Buffalo Style Stuffed Eggs

- 6 eggs, hard-boiled
- 1/4 cup blue cheese, crumbled
- 2 tablespoons mayonnaise
- 1 1/2 teaspoon fresh parsley, minced
- 1/4 teaspoon Tabasco sauce, or to taste
- 1/4 teaspoon salt or celery salt
- 1/8 teaspoon black pepper
- 1 rib celery, finely minced
- cayenne pepper, optional
Peel the hard-boiled eggs and slice each egg in half lengthwise. Carefully scoop out the yolks and place them in a bowl. Set the egg white halves aside on a serving platter. Combine the yolks with the blue cheese, mayonnaise, parsley, tabasco, salt, and pepper. Spoon the cheesy-yolk mixture back into the egg white halves, mounding slightly. Garnish the eggs with finely minced celery and a sprinkle of cayenne.
