- 2 pounds fresh ground beef
- 1 medium onion, chopped
- 1/2 cup chopped celery
- 1/4 cup diced green bell pepper
- 1 quart tomato juice
- 1 can (29 ounce size) tomato puree
- 1 can (15 ounce size) red beans, rinsed and drained
- 1/4 cup chili powder
- 1 teaspoon ground cumin
- 1 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon sugar
- 1/8 teaspoon cayenne pepper
Add the ground beef, onion, celery, and bell pepper to a Dutch oven over medium-high heat. Cook, stirring to break up the meat, for 5 minutes or until browned. Drain off any excess grease. Add the remaining ingredients to the Dutch oven. Mix well then cover the pan and reduce the heat to a very low simmer. Cook, covered, for 1 to 1 1/2 hours, stirring every 15 minutes or until the chili is fragrant. Adjust the seasoning to taste. Serve hot with any desired toppings.
