  • 2 pounds fresh ground beef
  • 1 medium onion, chopped
  • 1/2 cup chopped celery
  • 1/4 cup diced green bell pepper
  • 1 quart tomato juice
  • 1 can (29 ounce size) tomato puree
  • 1 can (15 ounce size) red beans, rinsed and drained
  • 1/4 cup chili powder
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sugar
  • 1/8 teaspoon cayenne pepper

Add the ground beef, onion, celery, and bell pepper to a Dutch oven over medium-high heat. Cook, stirring to break up the meat, for 5 minutes or until browned. Drain off any excess grease.

Add the remaining ingredients to the Dutch oven. Mix well then cover the pan and reduce the heat to a very low simmer. Cook, covered, for 1 to 1 1/2 hours, stirring every 15 minutes or until the chili is fragrant. Adjust the seasoning to taste.

Serve hot with any desired toppings.

½ cup mayonnaise 2 tablespoons yellow mustard 1 tablespoon Dijon mustard 3 tablespoons honey 1/2 tablespoon fresh lemon juice Combine ingredients in a small bowl. Whisk until well combined.
