  • 7 cups sliced, unpeeled cucumbers
  • 1 cup sliced onion
  • 1 cup sliced bell pepper
  • 1 tablespoon celery seed
  • 1 tablespoon salt
  • 2 cups sugar
  • 1 cup vinegar

Combine cucumbers, onions, and bell pepper; place in a large glass jar.

In a bowl, combine celery seed, salt, sugar and vinegar. Pour over cucumber mixture.

Cover jar and refrigerate immediately. Pickles are ready to serve immediately but will keep for months in refrigerator.
