Fried Fish Cakes

- 1/2 cup cold leftover fish (bones removed)
- 1/2 cup cold mashed potatoes
- salt, pepper & onion powder to taste
- 1 egg, beaten
- 1/2 small onion, grated
- flour
- shortening or oil
Shred fish and mix with mashed potatoes and seasonings. Add beaten egg and onion. Spray hands with non-stick cooking spray and shape mixture into small cakes. Dredge in flour and fry in 1/2 to 1 inch of hot oil.
